The project reflects a four-decade history of family ownership, refined by the Austins' global travels to world-class hospitality venues. Rather than attempting to emulate French champagne, the estate utilizes the region's volcanic Jory soils and high-elevation climate to craft a distinct Oregon expression. This vision is anchored by their inaugural Limited Edition Blanc de Blancs, a $150 Chardonnay-based sparkling wine produced via the traditional method.
Culinary operations are directed by Chef Brian Barker, formerly of Chicago’s three-Michelin-starred Smyth. His daily menu draws from the estate’s gardens, beehives, and local producers to pair with the wine program. Guests may choose between two reservation-only formats: the $250 Salon Experience or the $400 Full Experience, both strictly capped at twelve participants to foster intimate engagement. The architecture mirrors this focus on the environment, featuring glass walls that frame the vineyard and interior design elements crafted from the estate’s own soil. Perlée officially opens its doors on August 1, 2026, with wine sales restricted to on-site purchases or phone orders.
